Winter Chili

Hearty winter chili made with our ground beef, lamb, or pork in a rich, savory tomato sauce!
Ingredients
- Two pounds of our ground beef, lamb, or pork
- One large onion, chopped
- 4 garlic cloves, minced
- 1-2 bell peppers, any color
- Optional veggies: celery, carrots, zucchini, fresh tomatoes
- 2 cups crushed tomatoes with juice
- 1 cup beef, lamb, or chicken stock
- 2 Tbsp tomato paste
- 1 Tbsp chili powder (or adjust to taste)
- 1-2 tsp smoked paprika
- 1 tsp cumin
- 1 tsp oregano
- Salt & pepper, to taste
- Optional toppings: shredded cheese, coconut cream, sour cream, green onions, parsley, crackers
Directions
- Cook ground meat in a large pot over medium-high heat. Season with salt and pepper, if desired.
- Add the chopped onion and minced garlic. Cook for 3–4 minutes until softened.
- Stir in the diced peppers and other optional veggies. Cook until tender.
- Add the tomato paste, chili powder, smoked paprika, cumin, and oregano. Mix well.
- Pour in the crushed tomatoes with their juice as well as the beef stock. Stir to combine and bring the chili to a gentle simmer.
- Reduce the heat to low, cover, and let it cook for 30–40 minutes. Stir occasionally until the sauce thickens and flavors come together. Optional: add your favorite beans if desired!
- Taste and adjust seasoning. Add salt and pepper as needed.
- Serve the chili hot with your favorite toppings, such as shredded cheese, sour cream, chopped parsley, or green onions.
