Sweet Italian Spaghetti

A heartwarming pasta dish using slices of our Sweet Italian sausage links like little meatballs! It’s the kind of meal that fills the kitchen with comfort and brings everyone gladly to the table ~ because sometimes, nothing says “I love you” like a home-cooked meal!
Ingredients
- (1 lb) Sweet Italian Sausage Links
- 1 medium onion, diced
- 1 Hungarian wax pepper, finely chopped
- 2 cups maitake mushrooms, bite-sized pieces
- ¼ tsp fennel seeds
- 2 tbsp Italian seasoning
- 3 (12 oz) cans organic tomatoes, lightly blended or crushed
- ¼ cup pure maple syrup
- Freshly ground black pepper, to taste
- Freshly grated Romano cheese, for serving
- Fresh basil sprouts, for garnish
- 12 oz spaghetti (or pasta of choice)
Directions
- Remove casings and slice the sausage into small rounds (like little meatballs). In a large pot or skillet over medium heat, cook until slightly browned, about 6–8 minutes. Add a little olive oil if needed.
- Stir in the onion and Hungarian wax pepper. Cook 3–4 minutes until softened. Add the maitake mushrooms and cook another 3–5 minutes.
- Add the tomatoes, fennel seeds, Italian seasoning, maple syrup, and black pepper. Reduce heat and let the sauce simmer for 20–30 minutes, stirring occasionally.
- While the sauce simmers, cook pasta. Drain.
- Serve and top with freshly grated Romano and basil sprouts.
