Sausage Stuffed Mushrooms
Tender mushrooms filled with savory pasture-raised sausage, herbs, and a hint of garlic ~ an irresistible appetizer for any gathering!

Ingredients

  • 1 lb Italian or other sausage
  • 24 large cremini mushrooms
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1/2 cup breadcrumbs or quinoa flakes
  • 1/4 cup Parmesan or other preferred cheese, grated (optional)
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp olive oil (optional)
  • Salt & pepper, to taste

Directions

1 - Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.

2 - Prepare the mushrooms by removing and finely chopping the stems. Set the caps aside.

3 - Heat 1/2 tablespoon of olive oil in a skillet over medium heat. Add the sausage and cook until browned, breaking it into small pieces. 

4 - Add the chopped mushroom stems, onion, and garlic, and cook for 3–4 minutes until softened. Remove from heat and stir in the breadcrumbs or quinoa flakes, Parmesan, parsley, and a pinch of salt and pepper.

5 - Spoon the sausage mixture into each mushroom cap, pressing slightly. Place the stuffed mushrooms on the prepared baking sheet, drizzle with 1/2 tablespoon of olive oil (optional), and bake for 20–25 minutes until the tops are golden and the mushrooms are tender.

6 - Serve warm, garnished with extra parsley or a sprinkle of Parmesan if desired. Enjoy!
