Thai Larb Salad or Lettuce Wraps

Ingredients
- (3 lbs) Ground Pork
- 3 cloves garlic, chopped
- 1 lg sweet onion, chopped
- 4 lg jalapeños - 3 seeded and minced; 1 thinly sliced
- 3 limes
- 2 tsp maple syrup
- 1 Tbsp fish sauce
- 2 tsp Frank's Red Hot Sauce
- 1 1/2 Tbsp avocado (or other) oil
- 1 cup each: chopped cilantro, mint, basil
- Chopped peanuts
- Salt & Pepper, to taste
- Salad greens
Directions
1 - Mix ground pork, garlic, onion, and minced jalapeño in a medium bowl.
2 - Mix lime juice, fish sauce, maple syrup and 2 tsp Frank's in a small bowl.
3 - Heat the oil in a skillet. Add pork mixture and sauté until cooked through.
4 - Remove from heat and stir in the lime juice mixture. Let stand for 5 minutes.
5 - Transfer meat to bowl and stir in the fresh herbs. Add salt and pepper to taste.
6 - Spoon pork mixture over salad greens. Top with sliced jalapeño, peanuts, and Frank's. Garnish with lime edges. Enjoy!
Thai Larb can be used in many different meals: over salad, noodles, or grain bowls ~ and in stir-frys, lettuce wraps, or baked rice wraps. It's delicious as an appy or a stand alone meal and is easily doubled for larger gatherings!
