Shaved Round French Dip Sliders
Small handhelds, big flavor. Tender beef, thinly sliced with warm, flavorful au jus come together in these irresitable sliders!

Ingredients

  • (2 lbs) Shaved Round Steak
  • 2-3 Tbsp tallow (or other healthy fat)
  • 1 lg onion, thinly sliced
  • 3 cloves garlic, minced
  • 3 cups beef or other bone broth
  • 1 1/2 Tbsp Worcestershire sauce
  • 1 1/2 tsp tamari or soy sauce
  • 3/4 tsp salt, or to taste
  • 3/4 tsp black pepper
  • 3/4 tsp dried thyme
  • 8 slices provolone, Swiss, or other cheese
  • 16 slider buns

Directions

1 - Caramelize the onions: heat tallow (or other) in a large skillet over medium heat. Add the sliced onions and cook slowly, stirring often, until soft and golden, about 12 - 15 minutes. Add the garlic and cook for 30 seconds more. Transfer the onions to a plate.

2 - Make the au jus: in the same skillet, add the beef broth, Worcestershire, tamari, thyme, salt, and pepper. Bring to a gentle simmer.

3 - Cook the shaved round: gently separate the shaved beef with tongs. Add to the simmering broth and cook just until tender, about 2 - 3 minutes. Return the onions to the pan. Taste and adjust seasoning.

4 - Assemble the sliders: preheat the oven to 350°F (175°C). Split the slider buns and place the bottoms in a baking dish. Pile the beef mixture onto each bun, letting some juices soak in. Top with cheese and place the bun tops on.

5 - Bake: cover loosely with foil and bake 10 to 12 minutes until the cheese melts and the sliders are warmed through. Uncover for the last 2 minutes if you like lightly crisp tops.

6 - Serve: strain the remaining broth and serve warm in small bowls for dipping. Garnish with parsley if desired.


Gluten free options: In place of buns, try using large butter lettuce leaves or romaine hearts, grilled or roasted portobello mushroom caps, or roasted sweet potato rounds!
