This type of lard is white in color with a milder flavor that is ideal for baking. It also has a high smoking point, making it good for searing and frying.
In leaf lard, much of the saturated fat is replaced by (un-hydrogenated) monounsaturated fat, making it not just healthier but easier to spread at room temperature.
We freeze ours in small containers for pie and pasty crusts.
