Mark's Marinade
A quick, go-to marinade made with everyday ingredients. It adds just the right amount of taste without overpowering the exceptional flavor of the meat ~ then becomes a simple, creamy sauce for serving. (Photo features a Delmonico with the marinade.)

Ingredients

  • 3 tsp extra virgin olive oil
  • 2 tsp Worcestershire sauce
  • 1 tsp soy sauce
  • 1 lemon
  • 1 tsp of your favorite all-purpose meat seasoning
  • Sour cream or coconut cream (non-dairy)

1 - Mix together the olive oil, Worcestershire sauce, soy sauce, lemon juice, and all-purpose meat seasoning in a small bowl. Spoon 2–3 spoonfuls over your meat, coating it evenly, and let it marinate for about 1 hour before cooking (20 minutes will still add flavour if you’re short on time).

2 - Cook the meat using your preferred method until done to your liking.

3 - While the meat is cooking or after it has finished, take the remaining marinade and stir in sour cream or coconut cream along with the juice of another ¼ lemon. Mix well to create a simple finishing sauce.

4 - Serve the cooked meat with the sauce on the side. If your seasoning blend is quite salty, add a little extra lemon juice to balance the flavour.
